Ideas for gap year in South America?

Hey! I would like to take a gap year in south america after I finish my bac, but I would like for it not to be completely useless to my career path (management consulting). Is there any interesting stuff I can do, without speaking much spanish (eg. internships, volunteer programs, NGO projects, etc)?
